White Chicken Chili

Serves: 4

Ingredients:

  • 2 tbsp avocado oil
  • 1 garlic clove, minced
  • 1 yellow onion, diced
  • Salt and pepper to taste
  • 1 tsp chili powder
  • ½ tsp paprika
  • ½ tsp cumin
  • 1 tsp Italian seasoning
  • 2 lb chicken breast (4 chicken breasts)
  • 1 medium sweet potato, cubed
  • 1 serrano, diced
  • 2 bell peppers, diced
  • 4 cups chicken broth, stock or bone broth
  • 1 can coconut milk
  • Fresh parsley (optional for topping)
  • Fresh lime juice (optional topping)
  • Fresh Jalapeño (optional topping)

Directions:

  1. Heat oil over medium heat. Add garlic and cook 30 seconds.
  2. Add onions, salt & pepper. Saute 3-5 minutes, til softened.
  3. Push onions to the sides and add chicken to center of the pan, cook 3 minutes per side.
  4. Add bell peppers, serrano, herbs and spices. Add 4 cups chicken stock, mix well and simmer for 1 hour.
  5. Add coconut milk and diced sweet potato. Simmer another 30 minutes.
  6. Shred chicken.
  7. Top with cilantro, lime and jalapeno, if desired, & enjoy!

*serve over cauliflower rice for an additional serving of veggies!
